The production of wine begins in the vineyard. It is the genesis that indicates the path; location, climate, lands, decisive choices: they are all key elements that determine our wine’s quality.
Vineyard
It is the land where our vineyards are located that grants the txakoli its one-of-a-kind uniqueness. Our vineyards are located on the hillsides of the Ubao river, not only Oñati river’s tributary, but also Deba river’s. Ubao issues from the middle part of the mountain Aloña; Urzulo.
The use of local varieties such as Hondarribi Zuri and Hondarribi Beltza, together with Hondarribi Zuri Zerratia or Riesling, highlights the intrinsic richness offered by the local nature. The Atlantic climate, the geological diversity and the microclimates that generate different ripening periods, together with a winemaking philosophy of deep respect for the environment, are fundamental for a production focused on quality and sustainability.
We are driven by a single purpose: to explore to the maximum the oenological potential of each small ecosystem that forms in the vineyards.
WINERY
Murgialdai baserria, ever-changing, full of history, natural diversity, and complexity, with its restless and innovative spirit, has been transformed by creating a new space for its wines to live in, always respecting the environment. The new building rises from the ashes using simple, living materials, proper to the land, so that they evolve naturally over the years, yet while adapting to new requirements.
After thoroughly monitoring the evolution of the ripening of the grapes, we harvest by hand in 15 kg boxes, thereby preserving the grape’s properties.
The winery is equipped with the latest technology for the txakoli’s production, aimed at enhancing the original properties obtained in the vineyard.
